- 1 cup fresh blueberries
- 1/4 cup high-quality aged balsamic vinegar
- 1 tablespoon fresh thyme leaves
- 1 clove garlic, minced
- 1/2 teaspoon coarse sea salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for grilling)
Instructions
- Muddle the Berries: Place the fresh blueberries in a bowl and gently muddle them with a fork to release their juices.
- Mix the Marinade: Add the balsamic vinegar, minced garlic, thyme, sea salt, and black pepper to the muddled berries. Mix thoroughly.
- Marinate the Chicken: Place the chicken breasts in a shallow dish and pour half of the marinade over them. Let them rest for 15 minutes. Reserve the remaining marinade.
- Prep the Grill: Preheat your grill to medium-high heat (around 200°C) and lightly brush the grates with olive oil.
- Grill the Protein: Grill the chicken for 6-7 minutes per side until the internal temperature reaches 75°C.
- Glaze: During the final 2 minutes of cooking, brush the reserved blueberry glaze over the chicken breasts.
- Rest and Serve: Remove from the grill and let the meat rest for 5 minutes before slicing and serving.

- Thick Glaze Tip: For a thicker glaze, simmer the reserved marinade in a small saucepan for 5 minutes until reduced before brushing it onto the chicken during the final minutes of grilling.
