Instructions

  1. Muddle the Berries: Place the fresh blueberries in a bowl and gently muddle them with a fork to release their juices.
  2. Mix the Marinade: Add the balsamic vinegar, minced garlic, thyme, sea salt, and black pepper to the muddled berries. Mix thoroughly.
  3. Marinate the Chicken: Place the chicken breasts in a shallow dish and pour half of the marinade over them. Let them rest for 15 minutes. Reserve the remaining marinade.
  4. Prep the Grill: Preheat your grill to medium-high heat (around 200°C) and lightly brush the grates with olive oil.
  5. Grill the Protein: Grill the chicken for 6-7 minutes per side until the internal temperature reaches 75°C.
  6. Glaze: During the final 2 minutes of cooking, brush the reserved blueberry glaze over the chicken breasts.
  7. Rest and Serve: Remove from the grill and let the meat rest for 5 minutes before slicing and serving.
