Description

A rich, decadent copycat version of the famous Costco Lobster Mac and Cheese. Loaded with tender lobster meat, cavatappi pasta, and a luxurious three-cheese sauce.


Ingredients

  • 1 lb Cavatappi Pasta (or shells)
  • 1 lb Cooked Lobster Meat (tail and claw), chopped
  • 1/2 cup Unsalted Butter
  • 1/2 cup All-Purpose Flour
  • 4 cups Whole Milk (warmed)
  • 1 cup Heavy Cream
  • 2 cups Sharp White Cheddar Cheese, shredded
  • 1 cup Gruyère Cheese, shredded
  • 1 cup Fontina Cheese, shredded
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • Topping: 1/2 cup Panko Breadcrumbs + 2 tbsp Melted Butter + 2 tbsp Parmesan

Instructions

  1. Prep: Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
  2. Boil Pasta: Cook pasta in salted water for 2 minutes less than package directions (al dente). Drain.
  3. Make Roux: In a large pot, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes.
  4. Add Milk: Slowly whisk in warm milk and cream. Simmer for 5 minutes until thickened. Add spices.
  5. Melt Cheese: Remove from heat. Stir in Cheddar, Gruyère, and Fontina until smooth.
  6. Combine: Fold in the cooked pasta and lobster meat. Pour into the baking dish.
  7. Top: Mix Panko, melted butter, and Parmesan. Sprinkle over the mac.
  8. Bake: Bake for 20-25 minutes until bubbly and golden brown. Let rest 10 minutes before serving.

Notes

  • Lobster: You can use frozen lobster tails (steamed and chopped) or pre-cooked frozen lobster meat.
  • Make Ahead: Assemble the casserole, cover, and refrigerate for up to 24 hours before baking. Add 10 mins to bake time.
