Description

Skip the sugary frozen yogurt. This Viral Cottage Cheese Bark is the creamy, high-protein snack you’ve been looking for. Blended cottage cheese creates a cheesecake-like base that is topped with fresh berries and nuts for the perfect crunch.

Ingredients

Scale
  • 1 cup Cottage Cheese (Full Fat / 4%)
  • 2 tbsp Honey or Maple Syrup
  • 1/2 tsp Vanilla Bean Paste or Extract
  • 1/3 cup Fresh Strawberries (Sliced thin)
  • 2 tbsp Chopped Pecans or Almonds
  • 1 tbsp Dark Chocolate Chips

Instructions

  1. Blend: Combine cottage cheese, honey, and vanilla in a blender. Process for 60 seconds until silky smooth.
  2. Spread: Pour onto a parchment-lined baking sheet. Spread into a rectangle about 1/4 inch thick.
  3. Top: Sprinkle fresh fruit, nuts, and chocolate chips over the top. Press them gently into the base.
  4. Freeze: Freeze for 3-4 hours until solid.
  5. Snap: Remove from the parchment and break into shards with your hands. Serve frozen.

Notes

  • Keto Version: Use Allulose instead of honey and sugar-free chocolate chips.
  • Storage: Keep in a freezer bag for up to 2 months.
  • Thawing: Eat straight from the freezer; do not let it thaw or it will become messy.
