- 1 cup Full Fat Cottage Cheese
- 2 large Eggs
- 1/2 tsp Garlic Powder (optional)
- 1/2 tsp Italian Seasoning (optional)
- Black Pepper to taste
Instructions
- Preheat: Preheat your oven to 350°F (175°C). Line a quarter sheet pan (9×13) with parchment paper and lightly spray with oil. Do not use foil.
- Blend: Add cottage cheese, eggs, and seasonings to a blender. Blend on high until completely smooth and creamy. Ensure no lumps remain.
- Pour: Pour the batter onto the prepared baking sheet. Spread it out evenly to the edges using a spatula.
- Bake: Bake for 30-40 minutes. The flatbread is done when it is golden brown all over and dry to the touch in the center.
- Cool: Let it cool completely in the pan (about 10-15 minutes). This allows it to set so you can peel it off the parchment easily.
- Fill & Roll: Add your favorite sandwich fillings, roll it up tightly, and enjoy!

- Cooling is Key: Do not skip the cooling step, or the bread may fall apart.
- Crispier Version: For a sturdier wrap, bake for the full 40 minutes until deeply golden.
