Ingredients

  • 1 lb chicken breasts, cubed
  • 5 medium potatoes, diced (Yukon gold or red)
  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • Garlic powder and paprika (for potatoes)
  • Buffalo Wild Wings Garlic Parmesan Sauce (just enough to coat chicken)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Spray crockpot with cooking spray. Add diced potatoes and season with olive oil, garlic powder, salt, pepper, and paprika. Add minced garlic and toss to coat.
  2. Season cubed chicken with salt, pepper, paprika, onion powder, and Italian seasoning. Mix with enough Garlic Parmesan Sauce to coat evenly.
  3. Layer seasoned chicken on top of the potatoes in the crockpot.
  4. Cover and cook on low for 6 hours, or until chicken reaches 165°F and potatoes are fork-tender.
  5. Stir gently, sprinkle mozzarella cheese over the top, and let it melt with the lid off for 5–10 minutes.
  6. Serve warm with optional toppings like ranch, hot sauce, or more garlic parmesan sauce.
