Description

The ultimate High Protein Chicken Bacon Ranch Pinwheels. Made with a healthy Greek Yogurt ranch spread and crispy bacon. 32g protein and perfect for lunch.

  • 2 cups Cooked Chicken Breast, shredded (rotisserie or canned)
  • 6 slices Bacon, cooked crispy and crumbled
  • 1 cup Baby Spinach, washed and thoroughly dried
  • 1/2 cup Shredded Cheddar Cheese

The High Protein Spread

  • 1/2 cup Non-Fat Plain Greek Yogurt (must be thick)
  • 2 tbsp Light Cream Cheese, softened
  • 1 tbsp Dry Ranch Seasoning Mix
  • 1/2 tsp Garlic Powder

The Wrap

  • 4 Large High Protein Tortillas (or Carb Balance tortillas)

Instructions

  1. Make the Spread: In a small bowl, whisk together the Greek yogurt, softened cream cheese, ranch seasoning, and garlic powder until smooth and thick.
  2. Prep Tortillas: Lay the tortillas flat on a clean surface.
  3. Layer (Barrier Method): Spread the ranch mixture evenly over each tortilla, going all the way to the edges. This acts as the moisture barrier.
  4. Add Greens: Layer the dry spinach leaves over the spread.
  5. Add Protein: Sprinkle the shredded chicken, crumbled bacon, and cheddar cheese evenly over the spinach.
  6. Roll: Tightly roll the tortilla up like a sleeping bag, keeping the filling compressed as you go.
  7. Chill: Wrap each roll tightly in plastic wrap. Refrigerate for at least 30 minutes to let the spread “set” (this prevents them from falling apart).
  8. Slice: Unwrap and use a serrated knife to slice each roll into 1-inch pinwheels. Discard the empty ends.
  9. Serve: Serve cold or enjoy immediately.
