Apple Fritters:
- 1 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- 2 tablespoons granulated sugar
- ½ teaspoon kosher salt
- ½ teaspoon pie spice (pumpkin or apple)
- 1 teaspoon ground cinnamon
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
- ⅔ cup buttermilk
- 2 large Honeycrisp apples, peeled and diced (~3 ¼ cups)
- Oil, for frying
Maple Glaze:
- 2 ¼ cups powdered sugar
- ⅛ teaspoon kosher salt
- 1 tablespoon pure maple syrup
- 3–4 tablespoons milk
Instructions
- In a large bowl, whisk together flour, baking powder, sugar, salt, cinnamon, and pie spice.
- In another bowl, beat eggs, vanilla, melted butter, and buttermilk until smooth.
- Combine wet and dry ingredients to form a thick batter.
- Fold in diced Honeycrisp apples until evenly distributed.
- Heat oil in a medium pot to 360ºF.
- Using a cookie scoop, drop batter into hot oil in small batches. Fry 3–4 minutes until golden and crisp.
- Transfer fritters to a paper towel-lined tray to drain.
- For glaze, whisk powdered sugar, maple syrup, salt, and milk until smooth.
- Dip or drizzle glaze over fritters. Let set before serving warm.
Notes
- For extra flavor, add a dash of apple pie spice to the glaze.
- To reheat, bake at 350ºF for 8–10 minutes—avoid microwaving.
- Store leftovers in an airtight container up to 2 days, or freeze for 2 months.
