- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1 can (14.5 oz) diced tomatoes, undrained
- ½ cup beef broth or water
- 2 tsp minced garlic
- ½ tsp chili powder
- 1 tsp Worcestershire sauce
- ½ tsp salt
- ½ tsp black pepper
- Dash of cayenne or hot sauce (optional)
- ½ to 1 cup shredded cheese (cheddar, taco blend, or Monterey Jack)
Instructions
- Brown the Meat
In a skillet over medium heat, cook ground beef, onion, and bell pepper until browned (5–7 minutes). Drain excess fat. - Layer the Ingredients
In a 5-quart slow cooker, layer diced red potatoes on the bottom, followed by corn, cooked beef mixture, and kidney beans. - Mix and Pour Sauce
In a bowl, combine the diced tomatoes, broth, garlic, Worcestershire, chili powder, salt, black pepper, and cayenne. Pour this mixture evenly over the slow cooker contents. - Cook
Cover and cook on LOW for 6–7 hours or HIGH for 4 hours, until potatoes are fork-tender. - Add Cheese and Melt
Sprinkle shredded cheese on top, cover again, and let it melt for 5–10 minutes before serving.
Notes
- Potatoes on the bottom: Always place the potatoes at the bottom of the slow cooker to ensure even cooking. This is especially important for firmer red or Yukon Gold potatoes.
- Don’t skip browning the meat: It adds flavor and prevents grease from pooling in your casserole.
- Want less liquid? Drain your tomatoes before adding them, and reduce or skip the broth. Keep an eye on moisture to avoid sticking.
