  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 can (14.5 oz) diced tomatoes, undrained
  • ½ cup beef broth or water
  • 2 tsp minced garlic
  • ½ tsp chili powder
  • 1 tsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • Dash of cayenne or hot sauce (optional)
  • ½ to 1 cup shredded cheese (cheddar, taco blend, or Monterey Jack)

Instructions

  1. Brown the Meat
    In a skillet over medium heat, cook ground beef, onion, and bell pepper until browned (5–7 minutes). Drain excess fat.
  2. Layer the Ingredients
    In a 5-quart slow cooker, layer diced red potatoes on the bottom, followed by corn, cooked beef mixture, and kidney beans.
  3. Mix and Pour Sauce
    In a bowl, combine the diced tomatoes, broth, garlic, Worcestershire, chili powder, salt, black pepper, and cayenne. Pour this mixture evenly over the slow cooker contents.
  4. Cook
    Cover and cook on LOW for 6–7 hours or HIGH for 4 hours, until potatoes are fork-tender.
  5. Add Cheese and Melt
    Sprinkle shredded cheese on top, cover again, and let it melt for 5–10 minutes before serving.

Notes

  • Potatoes on the bottom: Always place the potatoes at the bottom of the slow cooker to ensure even cooking. This is especially important for firmer red or Yukon Gold potatoes.
