Description

A creamy, Tuscan-style chicken breast dinner made in the crockpot without heavy cream. Packed with 35g protein.


Ingredients

Scale
  • 1.5 lbs (680g) Chicken Breast, boneless skinless
  • ½ cup (120ml) Chicken Broth
  • ⅓ cup Sun-Dried Tomatoes, chopped (oil drained)
  • 1 cup (225g) Cottage Cheese (2% or 4%)
  • ¼ cup Parmesan Cheese, grated
  • 3 cloves Garlic, minced
  • 1 tsp Dried Oregano
  • ½ tsp Red Pepper Flakes
  • Fresh Basil, for garnish

Instructions

  1. Place chicken in slow cooker. Season with salt, pepper, oregano, and red pepper flakes.
  2. Add garlic, sun-dried tomatoes, and broth. Cook on LOW for 3-4 hours.
  3. Blend cottage cheese and parmesan until silky smooth.
  4. Remove chicken. Turn off heat. Whisk sauce into the pot liquid.
  5. Return chicken and garnish with basil.

Notes

  • Dairy Tip: Do not boil the sauce after adding the cottage cheese mixture to prevent separation.
  • Serving: Serve over pasta, mashed potatoes, or zucchini noodles.
