A creamy, Tuscan-style chicken breast dinner made in the crockpot without heavy cream. Packed with 35g protein.
Ingredients

- 1.5 lbs (680g) Chicken Breast, boneless skinless
- ½ cup (120ml) Chicken Broth
- ⅓ cup Sun-Dried Tomatoes, chopped (oil drained)
- 1 cup (225g) Cottage Cheese (2% or 4%)
- ¼ cup Parmesan Cheese, grated
- 3 cloves Garlic, minced
- 1 tsp Dried Oregano
- ½ tsp Red Pepper Flakes
- Fresh Basil, for garnish
Instructions
- Place chicken in slow cooker. Season with salt, pepper, oregano, and red pepper flakes.
- Add garlic, sun-dried tomatoes, and broth. Cook on LOW for 3-4 hours.
- Blend cottage cheese and parmesan until silky smooth.
- Remove chicken. Turn off heat. Whisk sauce into the pot liquid.
- Return chicken and garnish with basil.
Notes
- Dairy Tip: Do not boil the sauce after adding the cottage cheese mixture to prevent separation.
- Serving: Serve over pasta, mashed potatoes, or zucchini noodles.
