Ingredients

  • 2 medium sweet potatoes (roasted and mashed)
  • 1 cup brown sugar
  • 2 large eggs
  • ½ cup heavy cream (or evaporated milk)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 1 pinch of salt
  • 1 ½ cups graham cracker crumbs (or shortbread cookie crumbs)
  • 6 tbsp melted butter

For the Cinnamon Whipped Cream:

  • 1 cup heavy cream, chilled
  • 3 tbsp powdered sugar
  • 1 tsp ground cinnamon

Instructions

  1. Roast sweet potatoes at 400°F (200°C) until tender, about 45 minutes. Peel and mash until smooth.
  2. In a bowl, combine mashed sweet potatoes, brown sugar, eggs, cream, vanilla, and spices. Mix until creamy.
  3. For the crust, mix graham cracker crumbs with melted butter and press into a greased 9×9-inch pan.
  4. Pour sweet potato mixture over the crust and spread evenly.
  5. Bake at 350°F (175°C) for 35–40 minutes, or until the center is just set. Cool completely.
  6. In a chilled bowl, whip heavy cream until soft peaks form. Add powdered sugar and cinnamon. Beat until firm peaks form.
  7. Spread or pipe cinnamon whipped cream over cooled bars. Slice into squares and serve.

Notes

  • To save time, substitute roasted sweet potatoes with canned sweet potatoes (drained and mashed).
  • For gluten-free, use a gluten-free flour blend or gluten-free cookies in the crust.
  • For dairy-free, substitute coconut cream for heavy cream.
  • Bars can be made 1–2 days ahead; add whipped cream topping just before serving.
  • Store leftovers in the refrigerator for up to 4 days. Freeze bars (without topping) for up to 2 months.
