Description

  • 1 cup Old-Fashioned Rolled Oats (or Quick Oats for a smoother texture)
  • 1/2 cup Creamy Almond Butter (Substitute with sunflower seed butter for a nut-free version)
  • 1/3 cup pure Maple Syrup (Honey or smooth Date Paste also work perfectly)
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Cardamom
  • 1/2 tsp Ground Ginger
  • 1 tiny pinch Ground Cloves
  • 1 tiny pinch Ground Nutmeg
  • 1 tsp Vanilla Extract
  • 1 pinch Sea Salt
  • 2 tbsp Hemp Hearts (or finely chopped pecans)
  • Optional: 1 tsp Fine Espresso Powder (To make them “Dirty Chai” bites!)

Instructions

  1. In a large mixing bowl, thoroughly whisk together the oats, hemp hearts, ground cinnamon, cardamom, ginger, cloves, nutmeg, and sea salt until all the dry ingredients and spices are evenly distributed.
  2. Pour the creamy almond butter, pure maple syrup, and vanilla extract directly into the bowl with the dry spiced mixture.
  3. Use a sturdy silicone spatula to fold everything together aggressively. Continue mixing until a thick, cohesive, and deeply fragrant dough forms.
  4. Consistency Check: If your almond butter was particularly runny, the dough might feel too sticky to handle. Place the entire bowl in the freezer for 10 to 15 minutes to solidify the fats. If the dough feels too dry or powdery, add 1 teaspoon of warm water or melted coconut oil and knead until it binds perfectly.
  5. Once the dough is manageable, scoop out 1-tablespoon portions and tightly roll them into perfectly smooth spheres between your palms.
  6. Place the formed balls on a tray or plate and refrigerate for 30 minutes to set completely.
  7. Transfer the chilled bites to an airtight container and keep refrigerated for 1-2 weeks, or freeze for up to 3 months.

  • The “Dirty Chai” Upgrade: If you love the flavor of a mocha or an espresso-spiked latte, simply whisk 1 teaspoon of fine espresso powder or instant coffee into the dry ingredients before mixing!
