Description

Smooth, creamy, fresh, light and delicious – this vibrant green matcha flavored cottage cheese mousse requires simple ingredients and just 5 minutes to prep in the blender. It is the ultimate snack: nourishing enough to satisfy your cravings after a workout, but elegant and trendy enough to act as a proper no-bake cheesecake-style dessert!

Ingredients

Scale
  • 2 cups Thick, full-fat cottage cheese (4% milkfat preferred)
  • 1 to 1 ½ tablespoons Culinary grade matcha powder (adjust based on your preference for earthy flavor)
  • 3 to 4 tablespoons Maple syrup, honey, or sugar-free monk fruit sweetener (adjust to taste)
  • 1 teaspoon Pure vanilla extract
  • 1 tablespoon Greek yogurt (optional, adds a slight tang and softness)
  • Fresh raspberries, pistachios, or white chocolate chips (optional, for garnish)

Instructions

  1. Blend the Base: Add the cottage cheese to a high-speed blender or food processor. Blend on high for 1 to 2 minutes, stopping to scrape down the sides with a rubber spatula as needed. Continue blending until the mixture is completely silky smooth and no curds remain.
  2. Add Flavor: Add 1 tablespoon of the matcha powder, your chosen sweetener, the vanilla extract, and the optional Greek yogurt to the blender.
  3. Incorporate & Adjust: Blend again for 30 seconds just until the green tea powder and sweetener are completely incorporated into the smooth base and the mixture turns a beautiful pastel green. Taste the mixture. If you prefer a stronger green tea flavor, add the remaining half-tablespoon of matcha. Add an extra tablespoon of sweetener if needed to balance the earthiness.
  4. Portion and Chill: Pour the blended mousse evenly into 4 small glass jars or ceramic ramekins. Cover tightly and refrigerate for at least 1 to 2 hours to allow the mousse to set and thicken into a cheesecake-like texture.
  5. Serve: Serve chilled. Top with fresh raspberries, crushed pistachios, or a sprinkle of white chocolate chips right before eating!

Notes

  • Texture Tip: Do not rush the blending step! A high-speed blender is your best friend here. Blending for a full two minutes ensures you completely eliminate the cottage cheese texture, providing a smooth canvas for the delicate matcha powder.
  • Matcha Quality: Culinary grade matcha is perfect for this, but if you have ceremonial grade, you will get an even brighter green color and a smoother, less bitter finish.
  • Make it Sugar-Free: Easily make this keto-friendly by using your favorite powdered sugar-free sweetener (like allulose or monk fruit) instead of maple syrup.
  • Storage: Store the jars covered in the refrigerator for up to 4 days. Do not freeze solid, as the texture will change when thawed.
