Instructions

  1. Place the pitted Medjool dates into a large mixing bowl and mash them aggressively with a fork until a thick, sticky paste forms. (Alternatively, pulse them in a food processor until they clump together).
  2. To the sticky date paste, add the rolled oats, unsweetened shredded coconut, culinary matcha powder, and vanilla plant-based protein powder.
  3. Pour the creamy cashew butter directly into the bowl with the dry mixture.
  4. Use a sturdy silicone spatula to fold everything together aggressively. Continue mixing until a thick, cohesive, vibrant green dough forms.
  5. Consistency Check: Pinch the dough. If your dates were dry or the protein powder absorbed too much moisture, the dough may crumble. Add warm water or almond milk 1 teaspoon at a time until the mixture reaches a perfectly rollable, sticky consistency.
