  • 1 pinch Xanthan gum (optional, for extra thickness if berries add too much moisture)
  • Fresh raspberries or whipped cream (optional, for garnish)

Instructions

  1. Blend the Base: Add the cottage cheese to a high-speed blender or food processor. Blend on high for 1 to 2 minutes, stopping to scrape down the sides with a rubber spatula as needed. Continue blending until the mixture is completely silky smooth and no curds remain.
  2. Add Flavor: Add the fresh raspberries, your chosen sweetener, and vanilla extract to the blender. If using xanthan gum, sprinkle it in now.
  3. Incorporate: Blend again for 30-45 seconds just until the berries and sweetener are completely incorporated into the smooth base and the mixture turns a beautiful, vibrant pink. Taste the mixture and add an extra tablespoon of sweetener if the raspberries are too tart.
